Sodium Tripolyphosphate (STPP)
Multi-functional polyphosphate used extensively in processed meat, poultry and seafood. STPP helps increase water-binding capacity, improve yield and reduce drip loss in frozen and cooked products. It also contributes to improved sliceability and bite in hams, sausages, surimi, formed products and marinated poultry. Sodium Hexametaphosphate (SHMP)

Sodium Acid Pyrophosphate (SAPP)
Versatile leavening acid used together with sodium bicarbonate to generate carbon dioxide in bakery applications. SAPP is widely used in baking powders, self-rising flour, cakes, pancakes, muffins and refrigerated doughs. Different SAPP grades offer different reaction rates, allowing you to control gas release during mixing, proofing and baking for optimal volume and crumb structure.
Sodium Bicarbonate
High-quality sodium bicarbonate (baking soda) for use as a leavening alkali and pH regulator in bakery and snack applications. When combined with SAPP or other leavening acids, it releases carbon dioxide to create open grain and volume in cakes, quick breads, biscuits and fried doughs. Also used for mild pH adjustment and browning control in certain recipes.

Tricalcium Phosphate (TCP)
Fine, white powder used as an anti-caking agent, buffer and mineral source in a wide range of food systems. Trisodium Phosphate (TSP)
